Ashley’s Favorite Chicken Salad

Do you have go-to recipes for when you have a group of people together? This chicken salad has been my go -to for a long time. If I am hosting a baby shower, you can assume my chicken salad will be making an appearance. People always ask for the recipe. For a while I actually changed the recipe a little so that people wouldn’t have my original. I stopped being so greedy though and now I give the real one.  Including to all of you! 😉 We have family coming to town for Easter weekend and I decided to make this ahead of time so that everyone has something quick to eat if they’re  hungry. When we have family in town we tend to go out to eat because there are so many awesome restaurants here in Las Vegas. There’s always that awkward time of day though when you’re hungry, but you don’t want to dirty up the kitchen or you just need something quick to help settle your belly. This will do the trick, I hope!

Now, I am sure there are probably better chicken salad recipes out there. I really do love this one though. I’ve tried many chicken salad recipes and I think what sets this one apart from others is that there are grapes in it. The grapes have a subtle sweetness which is great next to the other spices that are in this recipe.

Ingredients:

  • 10 Chicken Breasts, shredded
  • 3/4 Cup Celery
  • 2 Tbsp Chopped Green Onion
  • 2 Cups Mayo or Miracle Whip
  • 2 Cups Sour Cream
  • 4 Tbsp Lemon Juice
  • 1/2 Tsp Pepper
  • 1 Tsp Salt
  • 1 Tsp Good Seasonings Garlic & Herb Dressing Packet
  • 2 Tbsp Parsley
  • 2 Cups Grapes (red or green), quartered
  • 1 Cup Cashews or Slivered Almonds

Gather all of your ingredients while your chicken is cooking. Once your chicken is fully cooked, shred your chicken using your preferred method. If you haven’t seen our post about using the KitchenAid to shred chicken, you have to check it out. Total time saver!

Next, you’ll add every ingredient except your nuts and grapes. Did that sound inappropriate or do I just need to get my head out of the gutter?

After you have everything mixed except your quartered grapes and almonds/cashews I like to refrigerate mine for about an hour. You don’t have to, but I have always done this. I like to add the grapes and almonds (my preference) right before company arrives. I do this because I always worry about the grapes getting mushy. They never have though. In fact, I’ve had this salad two days after the day I originally made it and it’s always tasted great! Maybe I should save myself some time and just mix it all together at once. Either way, I promise you this will turn out delicious.

I prefer serving this with warm croissants, cheese and lettuce. Today I decided I was just going to have mine on lettuce, but it’s nice to eat it on a crusty croissant! My favorite cheeses to serve with the salad are Harvarti, Swiss or Muenster. Delish!

Tip: Instead of Good Seasonings you could substitute red curry. Mmmm!

Edit: This makes A LOT. If you halve it you do not need to halve the Good Seasonings Garlic & Herb.

Chicken Salad
 
Ingredients
  • 10 Chicken Breasts, shredded
  • ¾ Cup Celery
  • 2 Tbsp Chopped Green Onion
  • 2 Cups Mayo or Miracle Whip
  • 2 Cups Sour Cream
  • 4 Tbsp Lemon Juice
  • ½ Tsp Pepper
  • 1 Tsp Salt
  • 1 Tsp Good Seasonings Garlic & Herb Dressing Packet
  • 2 Tbsp Parsley
  • 2 Cups Grapes (red or green), quartered
  • 1 Cup Cashews or Slivered Almonds
Instructions
  1. Boil or bake your chicken, then shred. Combine all 10 ingredients and mix in a large bowl.
  2. An hour before serving add your quartered grapes and cashews/almonds. Mix well.
  3. Serve on a bed of lettuce or on croissants. Suggested cheeses: Harvarti, Swiss, Muenster

      It’s nice to just make so that you have lunches all week too. So easy to just put on some lettuce or bread and then continue chasing the kiddos around.

          Im so glad you asked this. I need to update my post with the answer to this. I used 10 half chicken breasts. If you use whole or Costco chicken breasts, I’d definitely cut back. :)

            One more question… I’m thinking of using whole chicken instead of just the breasts. Do you remember about how many cups of chicken you got from the ten breasts? Thanks!

            I’d guess 6 cups? Every chicken breast will be a different amt, but that sounds about right.
