One of our families favorite recipes for many years, Peanut Butter Oatmeal Chocolate Chip Cookies is a recipe you will love to make over and over again through the years!
For years I have been, well, let’s just call it as it is… obsessed, with finding the perfect chocolate chip cookie recipe. I have tried so many recipes, eaten so many cookies, and spent so many hours in the kitchen that it might border on a tad crazy in some people’s book. However, for a big cookie lover like me it is worth the effort and sacrifice haha!
One of the most popular recipes of all time on The Pinning Mama is this Copycat Panera Chocolate Chip Cookie recipe. And I have to say, as far as a classic chocolate chip cookie recipe goes this is the world’s best in my book. Sometimes though, you want something a little different. Something with a little more texture or a zing to the flavor. This is where these peanut butter oatmeal chocolate chip cookies come in. My mom and I came up with these while I was in junior high and we have loved them ever since.

I always look forward to going home because I know my mom will have these waiting on me! They have such a tender, chewy, and amazing texture. The peanut butter and oatmeal are added in just small enough quantities that they enhance the flavor but don’t overwhelm it. Many times when I bring these cookies somewhere people ask me what is in them. They can tell there is a little something special but can’t quite put their finger on exactly what it is.
When I make these, I always make them bite sized. I don’t know why, except for the fact that when they are mini I can eat more and not feel bad. Or maybe it is just because little things are always cuter or because it is a great size for the kids. This is actually the only point my mom and I disagree on over these cookies. She likes to bake them big and thick. I do love those too, but any way you slice it, or bake it, these cookies are delicious.

To make these little guys (or big guys) you just need some basic cookie ingredients. Cream your butter and sugars and then add the peanut butter and continue to cream until smooth. You can use creamy or crunchy peanut butter… it is really up to your preference. Mix in the eggs and vanilla until creamy and well blended.
In a medium bowl add your dry ingredients including your oatmeal and mix until combined. Add the dry mixture to the wet ingredients in 3-4 batches mixing well between each add.
Use a cookie scoop to drop the cookies onto an ungreased cookie sheet. I use a 1 in scoop to make mini cookies and my mom uses a generous rounded spoonful when she bakes them.
Bake at 350˚ F for 8-12 minutes depending on the size. Since the cookies are a bit darker from the peanut butter it is a little hard to tell when they are brown, or should I say if they look brown then they are probably burnt, so just make sure the center is just set, where it doesn’t look shiny anymore.
Cool on a wire rack or just enjoy them hot out of the oven. You will loooooooove these. They are just so delicious. Soft, thick, and chewy, the perfect ratio of chocolate to cookie and that little something extra added with the hint of peanut butter and oatmeal.

Bite-Sized Peanut Butter Oatmeal Chocolate Chip Cookies
Ingredients
- 1 c white sugar
- 2/3 c brown sugar packed
- ½ c butter
- ½ c Crisco
- ¾ c peanut butter
- 1 tsp vanilla
- 2 eggs
- 2 c flour
- 1 c quick cooking oats
- 2 tsp baking soda
- ½ tsp salt
- 1 package chocolate chips
Instructions
- Preheat oven to 350.
- Beat sugars, butter, Crisco, peanut butter, vanilla, and eggs until creamy.
- In separate bowl mix flour, oats, baking soda, and salt.
- Mix gradually with butter mixture.
- Stir in chocolate chips.
- Drop by rounded spoonfuls onto ungreased cookie sheet.
- Bake 8-12 minutes or until slightly browned.
- *** Finished dough can be refrigerated and cooked at a later time
