When you are short on time and need something really delicious to bring to a party or potluck this appetizer is the perfect recipe to whip up quick! Creamy Taco Chicken Roll Ups are filled with creamy cheese, tender chicken and delicious taco flavor. The best part is that it only takes 5 ingredients and a few minutes to throw together something so delicious.
One of my most popular recipes here on The Pinning Mama the past few years is my Crockpot Creamy Taco Chicken, and for a good reason! It is so delicious, it is quick and easy to make, and you only have to have a few ingredients on hand to make it. When it started getting close to school season again and I was thinking of fun things that my kids might like in their lunch boxes, I got the idea to take the flavors from the Creamy Taco Chicken we love so much and put them in something my kids could easily eat in their lunch box.
All of the Creamy Taco Chicken ingredients were perfect for a tortilla pinwheel, they just needed to be reworked a bit! So instead of cooking it all together in a crockpot, I would use precooked chicken and mix that with the cream cheese, taco seasoning, and add the ROTEL for flavor.
So simple. So delicious.
Creamy Taco Chicken Roll Ups Recipe
I made these thinking that they would be perfect for the kids lunch box, but once I tasted I knew that not only would they love it, but it was also pretty much the perfect party appetizer. A little spice, a favorite comfort food, all wrapped up in a bite sized little package. YUM!

Creamy Taco Chicken Roll Ups – Ingredients
- 4 12″ soft tortillas
- 1 8 oz block Philadelphia Cream Cheese, softened
- 1 12.5 oz can premium white chicken breast meat, water drained
- 1.5 Tbsp McCormick Taco Seasoning
- 1/4 Cup ROTEL tomatoes with green chilis, Drained (sub regular diced tomatoes for a mild option)
Creamy Taco Chicken Roll Ups – Instructions
Making these is simple and you can whip them up in just a few minutes! First, combine the softened cream cheese and taco seasoning in a medium sized bowl and stir it well until it is well combined. You can cheat a bit and throw it all in together but I think it really makes the flavors distribute the best if you mix in the taco seasoning to the cream cheese first. Also, make sure the cream cheese is nice and soft. You can take it out of the fridge and leave it on the counter a couple of hours before you are going to make these, or take it from the fridge and put it in the microwave for a few seconds until it is nice and soft with no lumps.
Next, add the chicken and ROTEL to the cheese mixture and stir to combine. A couple of notes on this, first I have canned chicken in recipe. I am not usually a big fan of canned chicken but it does work really well in this recipe because it is super soft and tender and mixes really well. If you hate canned chicken, which I can understand, you can use shredded chicken breast you made in your favorite method but you may need to adjust the amount you add to the cheese mixture so that it still has enough cheese to stick it together. The second note is on the ROTEL. As I mentioned above, I created this recipe after my beloved Crockpot Creamy Taco Chicken recipe. In that recipe I use the taco seasoning and ROTEL to flavor the meat, so I did the same in this recipe. If you are making these for a tailgate, party appetizer or to take to a potluck I would keep the recipe as is. These also make a great main dish to pack in a lunch box for school. These are great flavors for kids, and with the small bit of ROTEL these they aren’t really spicy, but if your kiddos are super sensitive to spice, you can substitute regular diced tomatoes or leave them out all together.
Spread 1/4 of the mixture evenly on each tortilla. Then roll the tortilla up gently but firmly so that it is round and tightly rolled.
Use a serrated knife to gently slice the ends off of the tortilla roll then into 6 slices. It is important to use a serrated knife, because it will allow you to cut through the rolls without smashing them, so they will be nice and round and pretty. Then, chill the creamy taco roll ups about an hour to firm them up and let the flavors combine, and finally serve chilled straight from the fridge!
