I love to make parfaits because they look super fancy but are so quick and easy to throw together. You can serve them to adults and get ohhhhhs and ahhhhs or put them in front of your kids and as my son said… “MOM! What is THAT?!?!?!” Really combining Thin Mints with almost anything has to be a good idea right? They are just so darn good… and addictive!
To put these together I like to use stemless wine glasses. If you don’t have those you could always just use any short glasses, or even clear plastic cups to make it super easy when you are entertaining. Grab your ingredients:
- Jello Fat Free Sugar Free Chocolate Pudding – Prepared
- Fat Free Cool Whip
- 1 Sleeve of Thin Mint Girl Scout Cookies
- Nestle Mini Chocolate Chips
First crush your Thin Mints up by either 1. placing them in a baggie and using a rolling pin to roll over them until they are all crumbled <--- my prefrerred method, or 2. place them in a baggie and let your kids go to town stomping, dancing, and being a little crazy until they are crushed <--- my kids preferred method. Then to make the parfait we start the layering process. I find it easiest to get everything in really pretty layers by using 2 sandwich sized ziplock bags loaded with the pudding and whipped cream and one corner tip cut off to squeeze the wet stuff in. It allows a bit more control and is a tad less messy. So layer as follows:
- Pudding
- Cookie crumbles
- Cool Whip
- Mini Chocolate Chips
Then repeat until your glass is full, refilling your bags as needed. Add some whipped topping to the top and garnish with a cookie and some chocolate chips. The number of parfaits you will get will vary based on your glass size, but you can expect between 2-4 for one sleeve of cookies. My kids love to cook with me and this dessert is a great one for little helping hands since there is nothing hot and it is pretty straight forward. But if you don’t have kids, just smile because you will get to eat this about 100x faster than with those little helping hands!

Triple Chocolate Thin Mint Parfaits
Ingredients
- Jello Fat Free Sugar Free Chocolate Pudding - prepared
- Fat Free Cool Whip
- 1 sleeve Thin Mint Girl Scout Cookies
- Nestle Mini Chocolate Chips
Instructions
- Crush your Thin Mints by placing them in a ziplock bag and rolling them with a rolling pin.
- Then in a short glass layer chocolate pudding, cookie crumbs, Cool Whip, and chocolate chips.
- Repeat these layers until your glass is full.
- Top with Cool Whip and garnish with chocolate chips and a Thin Mint cookie.
