This easy Chicken Chorizo Sheet Pan Dinner combines tender chicken, flavorful chorizo, potatoes, and wholesome veggies all into one delicious dinner cooked right on a sheet pan to make it quick and easy! This is the perfect meal to make on busy week nights since, with only a handful of fresh ingredients, it is quick to prepare and packed with bold flavors that the family will love!
Chicken + Chorizo Sheet Pan Dinner Recipe
When the race is on to get dinner on the table and there are a bunch of hungry mouths anxiously waiting for it to appear, it seems that without fail, there will be absolutely no inspiration for what to actually make.
The next time you find yourself there, just whip this super dinner out and you will seem like a super hero without doubt. It is quick and easy to prep, super healthy but still packed with flavor, and quick cooking for a dinner trifecta to please the hungry mobs.
I got this recipe from one of my closest friends who told me I had to try it since it was one of her family’s all time favorite go-to dinner recipes. It came to her passed from her husband’s step-mother’s sister. She was born and raised in Australia so the flavors are true to the fresh flavors that they use there, and oh so refreshing to use here!
What to serve with Chicken + Chorizo Sheet Pan Dinner
The beauty of the sheet pan meals are that they are kind of all inclusive meals! You have your protein, a starch and your veggies that all cook together and are perfectly ready to eat all at the same time. So if you want, this recipe can be all you make for your meal and it will still be perfectly balanced. However, if you want to add a little something to it, I have a few ideas for you.
- Side salad– go classic, salad mix with some ranch, or go a little fancier and do a kale and brussel sprout salad, or an pesto caesar salad.
- Bread– This meal is perfect for pairing with a crusty loaf, or some delicious garlic bread.
- Extra veggies– This meal does already incorporate some veggies, but I always think that there is room for more! You could make some garlic green beans or a plate of sauteed greens.

How to Make Chicken + Chorizo Sheet Pan Dinner
The best part about this recipe is that it is super simple to make! I am going to walk through a few things with you below, just to make sure to answer any questions that might come up along the way. You can skip down to the bottom of this post to get the full printable recipe card.
Chicken + Chorizo Sheet Pan Dinner Ingredients
Almost all of my recipes are 10 ingredients or less. This one is 12, BUT don’t let the list intimidate you! First off two of them are salt and pepper, so that shouldn’t count anyway, right? Also, since this is a true one dish dinner, with a protein, a vegetable, and a starch, it shouldn’t be too overwhelming.
- 2 lbs Boneless chicken breast or thighs, cut into 2” chunks– This is going to be roughly 3-4 chicken breasts, or about 6 chicken thighs
- 12 oz red potatoes, quartered- If you use baby red potatoes, you may just want to half them or if they are extra large you can cut in 6ths or 8ths. Just get them small enough to cook through while baking.
- 1 sweet yellow onion, roughly diced- Make sure to separate the pieces so they can cook through and become nice and sweet. If they are stuck together they could be too thick to cook through.
- 2 links chorizo, cut into 2” chunks- Chorizo is a spanish style pork sausage. You will want to find the uncooked chorizo in the sausage section, not a cured chorizo that would resemble pepperoni. I remove the casing from the chorizo, but that is personal preference.
- 2 lemons, quartered
- 1 pint cherry tomatoes
- 2 oz fresh spinach- This is something like 2 extra big handfuls. Spinach cooks down so much that you need to add quite a bit to have any sign of it after cooking.
- 2 cloves garlic, pressed- Use fresh garlic here. It makes a big difference!
- 1 tbsp fresh oregano leaves, roughly chopped – You can usually find fresh oregano in the produce section. Remove the leaves from the stem and roughly chop them so the flavor comes out and really enhances the dish.
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp ground pepper
Chicken + Chorizo Sheet Pan Dinner Instructions
- Preheat oven to 375˚F.
- Toss the chicken, potatoes, onion, and chorizo with the olive oil, a squeeze of the lemon, salt, pepper, garlic, and oregano. Spread mixture on a cookie sheet and cover with foil and cook for 20 minutes.
The biggest thing to get right here is making sure that everything is roughly diced the same size so that it can cook evenly. Make sure the potatoes aren’t too big, and the onions are all separated. Also, I squeeze on the lemon and then just pop the rinds into the pan to bake with everything to continue to add flavor. You can squeeze out any remaining juice then discard the rinds after baking.
- Remove from oven, add cherry tomatoes and spinach. Toss gently and return to the oven uncovered to bake for an additional 10-20 minutes or until the chicken and chorizo are cooked through (165˚F internal temp.)
I like to add the spinach first. Once it is added you really want to toss it well, and I like for it to settle in toward the bottom of the pan with the other ingredients on top of it. This helps the spinach to wilt instead of drying out in the baking process.
