Halloween is finally over! Does it feel like Halloween lasts forever these days? Is it just me or do we celebrate it for much longer than we used to? I am not even sure my kids know that it is really only one day. I have had such a hard time the past couple of days explaining to them that Halloween is now in fact over. Since they keep asking for fun, special and spooky treats like they have been getting the past few weeks, I thought the perfect thing to do would be to have a fun MONSTER filled movie night watching the newly released Monster’s University. And every good movie night calls for popcorn, so we whipped up a really scare-worthy treat! A batch of Mike and Sully Monster Corn.
After nap was over, I asked my little guy if he had seen any monsters. He told me he hadn’t, so we decided he better look for some in case they were still lingering around from Halloween. He looked and looked and found Sully and Art all ready to watch Monsters University with him! He was beside himself with excitement, since in his advanced age of three years, Monster’s Inc has always been his favorite movie. We wouldn’t have survived several cross-country road trips without Mike and Sully! Thank goodness Walmart was fully stocked with Monster’s University Blue-ray combo packs and lots of Monster’s U toys like the plush Sully and Art we got, since we went on the day it was released to buy our copy!
As we settled in little sister joined us and being the tiny, yet constantly hungry little thing she is, she wanted a snack. Movies and popcorn are like peanut butter and jelly, so popcorn was a must for us! Today we were having Monster Corn filled with monster eyes to get in the spirit and ready to scare!
What is monster corn you ask? Well a twist on one of my favorites, candied popcorn, made using Jello to flavor it and candy eyes to monster-fy it! Monster corn is fun, colorful and full of my kids favorite flavors. It is such a fun snack for a party, a gift, or a fun movie night like tonight. The Jello give you so many fun flavor and color combinations, you can coordinate for any occasion!
Making the Monster Corn can be a little messy but the delicious sweet and salty, melt in your mouth, with a little bit of crunch combination is so worth the effort! So first pop up some popcorn! I used my air popper to quickly pop my corn.
Next you will heat butter, sugar, light Karo syrup in a large pot until it comes to a boil and continue to boil for three minutes. While the sugar mixture is boiling, combine the jello with the baking soda in a small bowl and mix well. To make my Monster’s University popcorn I used Green Apple for Mike and Blue Raspberry and Grape flavors for Sully.
Once the sugar mixture has boiled three minutes, remove it from the heat and mix in the Jello mixture. It will foam up a bit when mixed, so don’t worry. That is normal!
Next, mix your popcorn into the pot. If you can’t fit it all, no worries, just mix what you can and then spread it onto a parchment lined baking sheet and sprinkle and mix in the rest of the popcorn on the cookie sheet.
Put your cookie sheet into an oven preheated to 225°F for 15 minutes. Then remove from the oven, stir and return to the oven for an additional 15 minutes. When you remove from the oven the final time, add the candy eyes, stir the popcorn and then let it cool 20-30 minutes.
Once cooled break the popcorn apart and enjoy!
I made these cute little containers for the popcorn in about 5 minutes. I used some inexpensive plastic popcorn containers and cut cardstock to cover one side. Then I used cardstock to add the eyes and horns and a sharpie to fill in the details. Couldn’t be easier, and it made the snack extra special!
We had an absolute blast watching Monster’s University and even more fun eating our sweet treat! It was the absolute perfect way for us to wind down from Halloween and spend some great quality time as a family.

Homemade Monster Corn
Ingredients
- 6 quarts air popped popcorn
- 2/3 cup butter
- 1 1/2 cup sugar
- 1 cup light Karo syrup
- 1 tsp baking soda
- 1 package Jello - color an flavor of your choice
- 1 package candy eyes
Instructions
- Preheat oven to 225 degrees F
- Air pop your popcorn
- Heat butter, sugar, and kayro syrup in a large pot on high until boiling and continue to boil for 3 minutes.
- In a small bowl mix the Jello and baking soda.
- Once the sugar mixture is finished boiling remove it from heat and mix in the Jello mixture.
- If you want the color to be darker or a different hue, mix in food coloring of your choice.
- Now mix as much of your popcorn as will fit into the sugar-Jello mixture.
- Pour the mixture onto a parchment lined cookie sheet. and put it in the oven for 15 minutes.
- Remove from the oven, stir the popcorn and repeat one more time.
- once you remove the popcorn from the oven the second time you will mix in your candy eyes t the popcorn mixture and stir.
- Let the popcorn cool for around 45 min- 1 hour then break it up and serve.
- Enjoy!

That looks great! Did you use the butter/sugar/syrup amounts for each color or are the amounts listed the total for all 3?

Thanks Brandi! I made this recipe for each separate color and it was A LOT of popcorn! I would half the recipe and make each separately to get a more reasonable amount!
