These Baked Chicken Tostadas make a super quick and easy dinner option that not only comes together in minutes, but is also a kid favorite too! The key to making this meal so simple is that you start with a rotisserie chicken (or use leftovers from another night) and then season it, dress it up, and make it into this delicious dinner.
If you have been following along this summer you have probably noticed a couple of things… First, I haven’t been posting as much as usual. The short story is we moved! We went from the mountains to the coast via a very long and winding road trip. I always think that moving is going to be much easier and less stressful than it inevitably is. You would think with this being our 9th big move, I would learn but, ever the optimist, I never anticipate the level of stress and unsettlement that accompanies it.
The second thing you might have noticed is that the recipes I have been sharing over the summer have been super easy, super simple and just overly easy to make fast and get on the table. We are fully in the thick of the ages where kids are always in an activity and need to be somewhere which make dinner time really stressful. I am a HUGE fan of picking up a rotisserie chicken at the store, taking the meat of and using it to make meal time infinitely easier during the week.
If you don’t want to use rotisserie chicken, all of these can also use shredded or cubed chicken breast that you make from scratch or have leftover from another meal. Either way, using this type of pre-prepped chicken drastically reduces the time it takes to get a hot meal from the fridge to the table and can make a home cooked meal really doable even on the super busy and stressful weeknights.
Now today’s recipe is both a kid and adult favorite! Rotisserie Chicken Baked Tostadas. I like that the kids love them, I mean after all they are kind of like a giant nacho. Where the real win is though is that it is easy to customize (with no extra time) for each person’s taste preferences so that everyone has a meal they really like. No lettuce for my son. Guacamole for my daughter, sour cream for my son, and both for the adults. It is easy to make the base of these tostadas then let every one throw on the toppings they like best, both to sneak in some extra veggies, and also to give each person a meal customized to their tastes.
Now let’s get into the nitty gritty of the recipe. You are going to love how easy it is!
Rotisserie Chicken Baked Tostadas Recipe
I am going to go through the recipe below with all of my notes, tips, tricks etc for making it. If you are looking for the quick view recipe, scroll to the bottom for the printable recipe card. You guys know how excited I am about the easy factor on this one, so let’s get to it!
Ingredients
- 2 cups chopped or shredded chicken- I use rotisserie, but you can use any shredded or chopped chicken if you want to make it from scratch or use leftovers from another meal.
- 1/2 cup salsa- use your favorite brand
- 1/2 package taco seasoning- you can also use 2 tsp of my homemade fajita seasoning if you prefer.
- 4 tostada shells- find these near the tortillas in most grocery stores
- 1 can refried beans- use your preference. I usually get the low fat variety.
- 1 cup mexican blend shredded cheese- You can use sharp cheddar, or montery jack as well.
Toppings- Once the tostadas come out of the oven you can top them with any or all of the toppings below. This makes the meal super customizable to satisfy the (possibly multiple) picky eaters around the table and make sure everyone has something they like without extra time, effort, and prep at meal time. There might be other favorites you could add to this list too, but these are our go tos!
- Lettuce, shredded
- Tomatoes, diced
- Sour Cream
- Guacamole
- Salsa
- Pico de Gallo
- Chopped cilantro
Instructions
- Place the chopped chicken, salsa, and taco seasoning in a medium bowl and mix until chicken is coated.
- Line a cookie sheet with foil and then lay the 4 tostada shells flat on the sheet. The foil makes clean up take all of about 2 minutes.
- Spread 1/4 cup refried beans on each shell, then add 1/4 of the chicken mixture to each and top with cheese. You can use more or less of any of the ingredients to customize to your tastes.
- Bake at 400˚F for 8-10 minutes or until the cheese is melted and the tostada is heated through.
- Remove from oven and top with any or all toppings as desired. Serve hot and enjoy! You definitely want to eat these right away. They are perfect when they come out of the oven, but if you let them sit, the toppings do tend to make the shell soggy if it sits around. This meal is so easy that it shouldn’t be too hard to just throw it together once you are ready to eat since the prep and cook time are both minimal.
