Chicken + Chorizo Sheet Pan Dinner

This easy Chicken + Chorizo Sheet Pan Dinner is a home run for getting dinner on the table quickly and not sacrificing flavor.  It is packed with tender chicken, spicy chorizo sausage, tangy lemon, wholesome veggies, and lots of delicious seasonings. It is easy to prepare and simple to clean up for a dinner time home run!

Ingredients

  • 2 lbs Boneless chicken breast or thighs cut into 2” chunks
  • 12 oz red potatoes quartered
  • 1 sweet yellow onion roughly diced
  • 2 links chorizo cut into 2” chunks
  • 2 lemons quartered
  • 1 pint cherry tomatoes
  • 2 oz fresh spinach
  • 2 cloves garlic pressed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1 tbsp fresh oregano leaves roughly chopped

Instructions

  • Preheat oven to 375˚F.
  • Toss the chicken, potatoes, onion, and chorizo with the olive oil, a squeeze of the lemon, salt, pepper, garlic, and oregano.  Spread mixture on a cookie sheet and cover with foil and cook for 20 minutes.
  • Remove from oven, add cherry tomatoes and spinach. Toss gently and return to the oven uncovered to bake for an additional 10-20 minutes or until the chicken and chorizo are cooked through.
