BBQ Chicken Baked Potatoes
These BBQ Chicken Baked Potatoes make a super easy and incredibly tasty weeknight meal. These are perfect to make with leftover barbecue and can be customized and topped with whatever your family loves!

- 4 russet potatoes baked
- 1 1/3 cup BBQ chicken
- 4 tbsp butter
- 1 cup sharp cheddar cheese grated
- 1/4 cup ranch dressing
- 1/4 cup cilantro chopped
Optional toppings
- caramelized onions
- green onions
- french fried onions
- black beans
- sour cream
- sweet corn
- broccoli florets
- coleslaw
Split open each baked potato, add butter, and fluff. Top each potato with 1/3 cup BBQ chicken.
Add 1/4 cup cheddar cheese on top of the chicken and then bake at 400˚F for 10-15 minutes or until the cheese is melted and the chicken is heated through.
Top each potato with 1 tbsp of sour cream, 1 tbsp of cilantro, and any additional toppings desired. Serve immediately and ENJOY!
Leftovers can be stored in an airtight container for 3-4 days in the refrigerator or in the freezer for up to a month.
