I love to cook… I really do. However, I think the daily grind of getting dinner on the table can bring down the best of us. That is why I like to keep a little arsenal of super quick and easy crowd pleasers handy, so on those nights that I have a hard time getting motivated to cook, but can’t quite justify take out, I have something super quick and easy to pull out that I know everyone will happily gobble up! This BBQ Chicken French Bread Pizza is one of those secret weapon meals.
I almost always have everything I need (minus the bread) on hand. I like to keep meal sized portions of shredded chicken breast in the freezer so that meal prep during the week is really easy. Doing this has really changed the dinnertime routine for us. It is easy for me to buy the family pack of chicken breasts on my weekly trip to the store. Then I cook the entire pack by plopping them on a cookie sheet and baking for 25-35 minutes. When they come out, I let them cool, then use this absolutely genius little trick to shred all of that chicken in about 1 minute. I throw meal sized portions in freezer bags and toss it in the freezer to use over the next week or two.
When I know I have the meat prepped, I am so much more successful at getting dinner on the table each and every night during the week. For this BBQ Chicken French Bread Pizza, I just stop at pretty much any market that I am by during the day and get a nice fresh loaf. Then all you need is your favorite barbeque sauce, your shredded chicken, cheese, and optionally, red onion and cilantro.
When you have the chicken prepped and ready on hand, then whole meal comes together in about 20 minutes including prep time! Just slice the loaf in half horizontally, spread a thin layer of bbq sauce, mix the shredded chicken with about 1/2 cup of sauce and spread the mixture evenly across both halves. Sprinkle the top with cheese, and red onion and pop it in the oven. I usually cook it on 425˚F (nice and hot to melt that cheese) for 10-12 minutes.
Take it out when it is heated through and the cheese is melted. Add a sprinkle of cilantro on top and you have a super easy dinner, prepped and ready in a real person’s 20 minutes! BBQ Chicken French Bread Pizza
Ingredients
- 1 loaf french bread
- 2 cups cooked shredded chicken breast
- 1/2 cup barbecue sauce
- 1.5 cup shredded sharp cheddar cheese
- 1/4 red onion finely sliced
- 2 tablespoons cilantro diced
Instructions
- Cut your french bread loaf in half. Spread a thin layer of bbq sauce and a sprinkle of cheese on each half.
- Mix the remaining bbq sauce with the shredded chicken and spread the mixture evenly between the two loaves. Spread the cheese evenly over the two halves and sprinkle the red onion on top.
- Bake at 425˚ F for 10-12 minutes.
- Sprinkle the cilantro on top. Slice and serve hot!
