Making this chicken caesar sandwich recipe is super easy by using crock pot chicken and premade ciabatta rolls. They are quick, easy, and healthy dinner idea and fancy enough to be perfect food for a wedding shower, baby shower or brunch.
Caesar salad has always been one of my favorite meals. I remember when my husband and I were engaged he was living in the middle of NOWHERE in Mississippi, a town so small there wasn’t even a Chili’s not to mention a luxury like Target. Because of my work schedule I was able to go to visit him most weekends and the one thing I really looked forward to in this tiny little town (besides seeing him of course!) was the Pesto Caesar Salad from this cute little local restaurant.
I became kind of addicted to it and would get it at least once every weekend I visited. I shared a Copycat Pesto Caesar Salad here, but ever since we left I have loved incorporating caesar salad into all sorts of different meals. One of our favorites is Chicken Caesar Sandwiches!
They are great for many reasons, but there are two BIG reasons. First, you get all the wonderfulness of chicken caesar salad in something you can hold in your hand- no fork needed! Second, you whip up this delicious caesar chicken in the crock pot and use premade ciabatta rolls, making it a super easy dinner!
Isn’t it pretty? It is kind of a bonus that these sandwiches are that easy but come out looking so beautiful! It actually makes it the perfect food to make for a baby shower or bridal shower as well. I have made these for plenty and you can use a large french bread loaf in place of the ciabatta, cut in thin slices, and serve it up to elegantly and easily feed a crowd.
Easy Chicken Caesar Salad Sandwiches Recipe
As I mentioned above making these chicken caesar sandwiches is easy. First grab your crock pot and start your caesar chicken {Crock Pot Caesar Chicken Recipe here}. You can start this in the morning before you leave for work so it will be ready when you get home.
Once your chicken is done and you are ready to gather the rest of your ingredients and make the sandwiches.
Slice a washed romaine heart into pretty small pieces. There is nothing worse than biting into a sandwich and having a piece of lettuce fling out and stick to your chin! Not that that has ever happened to me…. You can also use prepackaged romaine, but you might want to see how small it is chopped and cut a little more if needed.
Place the lettuce in a bowl and add the dressing, parmesan, and salt and pepper to taste. Toss to combine and coat. I prefer creamy caesar dressing on my salad so I always use creamy on the greens for this sandwich. If you have a favorite caesar dressing I would recommend that you use that in this step too.
Next comes the rolls. Slice the roll in half and toast it in the oven. I usually use broil for about 3-5 minutes to get the inside of the roll golden brown. I buy my ciabatta rolls at Costco. They source them from La Brea Bakery and they are absolutely delicious! You can use any ciabatta you like though and can find it at most major super markets and bakeries.
Now you just layer. It’s super easy! Roll bottom – caesar chicken from your slow cooker- caesar salad mix- tomato slices – roll top. If you really like caesar, you can add an extra bit of caesar dressing spread on the inside of the top roll.
Dinner in minutes and very little clean up. That is my kind of cooking!

Easy Crock Pot Chicken Caesar Sandwich on Ciabatta
Ingredients
- Crock Pot Caesar Chicken
- 1 Romaine Heart
- 2-3 tbsp Creamy Caesar Dressing
- 1/4 Freshly Grated Parmesan
- 1 Tomato Sliced
- 4 Ciabatta rolls
- salt and pepper to taste
Instructions
- Prepare Crock Pot Caesar Chicken as directed.
- Chop washed romaine heart into small slices.
- Toss lettuce, cheese, and dressing together to coat. Season with salt and pepper to taste.
- Cut the ciabatta rolls in half and toast them by placing them in the oven cut side up on broil for 3-5 minutes or until they are golden brown.
- Layer the bottom of the roll, caesar chicken, caeser salad mix, tomato and finally the top of the roll to finish your sandwiches.
- Extra caesar dressing can be spread on the cut side of the top bun if desired.
