I have been on a recipe pinning kick lately. Maybe I am just hungry or maybe it is fantasizing that if I pin it then it will magically appear prepared on my dinner table but I definitely am on a yummy looking food kick. This is great though because I have some great food pins to share with you this Monday to help you get those menu planning wheels rolling.
For midweek when things get crazy I love to have an easy crockpot meal I can throw together when things are less hectic (read at least one kid napping) and just forget about it until dinner comes around. One of my favorite recipes I have found on Pinterest is Easy Crockpot Potato Soup by Pearls, Hancuffs, and Happy Hour. First off read her tag line, “a pinch of June Cleaver, a dash of Martha Stewart, and a whole lotta Mommy,” I mean I just want to be her friend! Another reason to be her friend? That soup is amazing. And almost zero effort! Does life get any better? My whole family loves it. Even my kids will eat it! This dish appears on our menu almost too frequently come cold weather season. I never would have made potato soup if I had to peel and dice a bunch of potatoes so the hash browns are pure genius. And if you read my Easy Chili Recipe post yesterday you will know that I love my toppings and potato soup is the perfect soup to pile on the toppings! Yum!
To round out the week I want to make this pin for Jalepeno Popper Chicken by Elly Says Opa that I have been drooling over ever since I pinned it. We enjoy a kick and since this combines one of my favorite spicy foods with chicken I can’t imagine it to be anything but devine. I plan on serving it with a simple green salad with some creamy ranch dressing like in the picture. I hope I can wait until the end of the week!
