Pumpkin Chocolate Chip Cookie Recipe

Every year, about a week before Fall officially starts, I start craving pumpkin – everything. It’s like my body knows and can feel the air getting ready to turn crisp. It starts with a pumpkin spice latte from Starbucks, then pumpkin bread, and then my pumpkin chocolate chip cookies. I always try to scale back with my pumpkin addiction because I don’t want to get burnt out. I don’t even think that’s possible though! Well, folks, it’s that time and you know what I made? Pumpkin chocolate chip cookies. And oooooh my goodness I am already looking forward to future batches! My favorite thing about this recipe is that you can dump everything into one bowl. This makes cleanup so easy!

Mix your eggs and sugar in a bowl until fluffy. Then add pumpkin, eggs, flour, baking powder, pumpkin spice, baking powder and baking soda. Mix until everything is mixed.pumpkin cookies 1

This next step is up to you. You can either use a whole bag of white chocolate chips, semi-sweet chocolate chips or BOTH! I went with both, because, why not? I did half a bag of each. Pour them into your bowl (s) and mix. Then scoop out onto your cookie sheet and place into a preheated 375 degree oven. pumpkin chocolate chip cookies via the pinning mama

Bake them for 12-15 minutes or until the bottoms are brown. With this most recent batch I had major issues figuring out the temp. In every other oven it has been 15 minutes. In my mom’s oven it was 9 minutes! She has a Viking Oven and I have a hard time believing it runs super hot, but apparently it does!

Pumpkin Chocolate Chip Cookies


  • 2 cups butter, softened
  • 2 cups sugar
  • 1 can (16 ounces) pumpkin
  • 2 eggs
  • 4 cups flour
  • 2 tsp pumpkin spice (optional)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 bag of white chocolate chip cookies or semi-sweet


  1. Preheat oven to 375 degrees
  2. Combine and mix butter and sugar in a large mixing bowl until fluffy.
  3. Add pumpkin and eggs and combine until smooth.
  4. Add flour, pumpkin pie spice, baking powder and baking soda; beat until blended.
  5. Stir in your choice of chips.
  6. Drop teaspoon sized dough balls (might be slightly sticky) onto a greased cookie sheet. Bake 12-15 minutes or until the bottoms are browned.
  7. Let set and cool for about 10 minutes.
  8. **For a sweeter cookie you can make a glaze out of powdered sugar and a little milk. Drizzle over slightly warm cookies**

    The 12 out of 36 that didn’t totally scorch on the bottom were heavenly! I added both semi-sweet and white chocolate chips. I’m super sad to have thrown away so many, but I’ll try them again another time.
