I am going to go out on a limb here and just say that this is the pinnacle of comfort food. When you take two of my all time favorite foods ever, the grilled cheese sandwich and a big dish of hot spinach and artichoke dip, and smash them together you get what com only be described as epic. And the spinach artichoke grilled cheese is definitely epic.
On Monday I posted my ridiculously good {and highly addicting} Spinach Artichoke Dip recipe. If you saw it, you will remember me mentioning that the recipe makes quite a bit of dip, but as you may recall, I begged you not to half the recipe. If you have leftovers, and you better hope that you do, there are some seriously good ways to use them up. So to start, I would recommend getting out your leftovers, or whipping up a quick dish. In a worst case scenario, I guess you can pick up a pre-made tub at the store, but the chances are it won’t be nearly as good.
Next, let’s talk bread. Again, you could just pull out the sandwich bread. Would it work… yes. Would it be the best thing your taste buds ever came across… probably not. I think the best way to go is a good crusty white bread. In the sandwich I made for the pictures, I used the rosemary loaf from Costco. It was phenomenal to say the least. If you don’t have a Costco around, fear not, just pick up some ciabatta, italian, sourdough or even a nice loaf of french bread from the bakery where you normally shop. These will all be fantastic with this sandwich. Tip: Most store bakeries will even slice any bread they sell for free! Save some time and a lot of messy bread crumbs by taking your loaf up to the counter and having it sliced.
Once you have your dip and bread, cut your bread {or use those nice slices you got cut at the bakery counter} in roughly 1/2 inch slices. Preheat your griddle pan on medium heat. Spread a thin layer of butter on the outside of each slice and then spread a thick layer {approx 2-3 tbsp depending on the size of your bread} of spinach dip on the inside of the first slice and lay it on the griddle. Sprinkle about 1 tbsp of mozzarella cheese on top of the dip and cover with the second slice of bread, butter side up. Repeat for as many sandwiches as your heart desires {plus three, because really it is hard to stop.}
Cook your sandwich for 2-4 minutes or until the bottom side is golden brown, making sure to check for doneness every minute or so. Then flip your sandwich and cook for an additional 2-4 minutes on the second side until it is also golden brown and the inside is heated through.
Remove from the heat and serve immediately.
Now you may think that this is the best thing you have ever eaten, and although you would be right, the next best thing you will ever eat is this sandwich dipped in this creamy tomato soup. It shouldn’t even be legal for a meal to be this good. Seriously! If you want something simple that is guaranteed to impress, this is the meal. Spinach Artichoke Grilled Cheese
Ingredients
- 8 1/2 inch slices fresh crusty white bread
- 8-12 tbsp spinach artichoke dip
- 4 tbsp shredded mozzarella cheese
- 2 tbsp butter
Instructions
- Preheat a griddle pan on your stove over medium heat.
- Spread butter on one side of each slice of bread.
- Spread 2-3 tbsp of spinach artichoke dip on the inside of 4 of the bread slices.
- Place these four slices butter side down on the griddle.
- Sprinkle 1 tbsp of mozzarella cheese on top of the spinach dip on each sandwich.
- Top the sandwiches with the remaining 4 slices of bread, butter side up.
- Cook for 2-4 minutes or until the bottom of the bread is toasted and golden brown, checking about every minute.
- Flip over the sandwich and cook the second side for 2-3 minutes or until toasted and golden brown.
- Serve immediately. Best served with this Creamy Tomato Basil Soup
