This quick and easy Bacon Lettuce Tomato Chicken Bake is one of the fastest and most delicious ways to make dinner when you are eating Whole30 or Paleo. With just a handful of whole ingredients and minimal prep time you can have this dish from the fridge to the oven in just a few minutes.
We don’t always eat Whole30, but when we did, my number one complaint was how long everything seemed to take to prepare. I love to cook and I still got frustrated with the amount of time I seemed to spend in the kitchen both cooking AND cleaning! UGH! I knew there had to be an easier way. I can’t be the only person who wants to eat healthy and still have a life outside the kitchen.
Since I am so in love with my chicken bakes, I finally decided to start giving them a formal makeover on the blog to share Paleo and Whole30 friendly versions and this one was a prime candidate!

Paleo + Whole30 Compliant BLT Chicken Bake Recipe
This recipe is loaded with juicy chicken, flavorful bacon, crisp lettuce, and thick red tomatoes. It is the perfect twist on a classic recipe. This version is pretty close to the original BLT chicken bake recipe which I absolutely love! There are just a few modifications you want to make so that you make sure that you are meeting the guidelines for the general Paleo or Whole30 Diets and you don’t lose any of the good stuff, so no feeling like you are missing out on life while enjoying the benefits of eating healthy.
First mix up some Whole30 Ranch. To do this use homemade mayo, and just mix it with my Whole30 Homemade Ranch Seasoning. This will give you a nice thick ranch to spread on top of the chicken that will add tons of delicious flavor.
I don’t get too exact when spreading on the ranch, I just try to spread a nice layer on top of each chicken breast covering as much of the surface as possible to get the yummy flavor in every bite.
Next layer the bacon over the ranch. If you are following strict Whole30 or Paleo, make sure that you have found sugar free bacon. I know they sell it at Whole Foods among other stores. Cut each slice in half and lay both halves of a slice over one chicken breast trying not to overlap it.
Now you can pop it straight in the oven (preheated to 400ËšF) on the middle rack. Since the oven is pretty hot should get the edges of the bacon pretty crispy while adding a ton of flavor to the chicken it is sitting on while it bakes. If you only like your bacon super crispy then you will want to bake it separately (this is an easy way to bake bacon.)
While the chicken cooks, wash your romaine heart and pat dry and then slice the lettuce into bite sized pieces. Slice the tomatoes into nice thick slices. I like to use Roma tomatoes because they usually perfectly fit the size of my chicken breast.
After about 25-35 minutes depending on how thick your chicken breasts are, the chicken should be done. Make sure you cut into the thickest part and that there is no longer any pink.
Remove the chicken from the oven and let it cool about 5 minutes. Then layer on the crisp romaine lettuce, and about 2 slices of tomato for each chicken breast.
Serve immediately or the heat from the chicken will cause the lettuce to wilt. This is great over any greens and especially spinach! You could also eat it with sweet potatoes or over cauliflower rice. However you serve it up, it is sure to be a hit with you since it is so easy to make, and a hit with them, since it is so delicious to eat!

BLT Chicken Bake {Paleo + Whole30}
Ingredients
- 3-4 Chicken Breasts boneless skinless
- 3-4 Slices of Bacon
- 1/4 Cup Mayo Homemade for Whole30
- 2 tsp Whole30 Ranch Mix
- 1 Romaine Heart washed and dried
- 2 Roma Tomatoes
Instructions
- Place the chicken breasts flat in a baking dish. If they are extra thick, you may want to butterfly them to cut down the baking time.
- Mix mayo and ranch mix and then spread about 1 Tbsp of ranch on each chicken breast. Cut each bacon slice in half and place 2 halves on each chicken breast.
- Bake at 400F on the middle rack for 30-40 minutes or until the chicken is cooked through.
- Chop the romaine into bite sized pieces and slice the tomato.
- Top the chicken with romaine then tomato and serve immediately.
- Serving suggestions: Over toast, over spinach (heat will wilt it,) over rice, potatoes or your favorite greens.
