I remember when I was a new mom, the world nearly stopped when my baby got sick for the first time. Sure enough the weather turned, and soon enough we were in the thick of cold and flu season. He was right under a year and when I picked him up I could just feel the heat radiating from him. Best Homemade Chicken Noodle Soup Recipe
We could talk about cold and flu season without talking about chicken noodle soup. It seems that no matter how sick my kids are, they always want to eat. That can be tricky at times since you don’t want to make them feel worse, so I like to stick to tried and true dishes that are easy on sick tummies like chicken noodle soup.
I have a little bit of an obsession with trying out new recipes, combining them with old recipes, and tweaking it all until I finally concoct the one that is SO GOOD that I never need another recipe for that dish again. Well, let me tell you, Homemade Chicken Noodle Soup is D-O-N-E. This recipe is the only one you will ever need. It is so flavorful. It is packed with veggies, noodles, and rich chicken flavor. The best part is that for something so flavor packed, it is so simple to make! I also know it is the best, because I took a special batch over to one of my toughest critics and two bowls and only about 5 minutes later I got the stamp of approval and told to label this one the WORLD’S BEST. So there you go!
The secret ingredient is really the rotisserie chicken for a few reasons. First, I really love the flavor and texture of rotisserie chicken. Using it in place of plain chicken breast already adds to the flavor, but to make it over the top, you start the soup by simmering the whole chicken in the broth. You take the entire chicken, bones and all, and put it right in your pot. This is also how you make chicken broth and why it has so much amazing flavor, so starting the soup off like this gives it a base of incredible flavor.
The other thing that makes this soup a little extra special is the addition of cornstarch. Many of the chicken soup recipes I have tried or created over the years does not have this. The cornstarch helps to bring everything together and makes the broth of the soup just a touch thicker. I think this is great especially when you are sick because it gives your stomach something to hold on to. Sometimes when things are too watery it make me feel a bit nauseous, but when there is a bit more texture and weight it can actually feel a lot more settled on an empty stomach.

World's Best Chicken Noodle Soup
Ingredients
- 1 Rotisserie Chicken prepared
- 2 cups chopped celery
- 2 cups chopped carrots
- 1 large yellow onion chopped
- 4 Tbsp Butter
- 1 tsp poultry seasoning
- 96 oz chicken broth
- 12 oz 1 package wide egg noodles
- 1/3 cup corn starch
- 1/4 cup water
Instructions
- Place the carrots, celery, onions, butter, and poultry seasoning in a large stock pot on medium high heat and sauté until the vegetables are tender, about 5-10 minutes.
- Place the entire chicken on top of the vegetables and then pour the broth over the top. Bring the pot to a boil, then reduce heat to low and simmer for 30 minutes.
- While the soup simmers, mix the cornstarch and water until the cornstarch is completely dissolved. Then at the end of the 30 minutes, remove the chicken from the soup and pour the cornstarch mixture into the broth slowly while continuously stirring. Once it is all combined, stir in the noodles and let them cook 6-8 minutes or until just tender.
- While the noodles are cooking, remove the chicken meat from the bones and chop it into bite sized pieces. When the noodles are tender, stir the chicken in and mix well.
- Serve hot and enjoy!

I’ve read a lot of comments about how keep from getting sick but let’s talk about this chicken noodle soup!!!! Hands-down the best chicken noodle soup I made AND it’s super easy! Cooking the rotisserie chicken with the broth really gives it so much flavor! I have actually been roasting my own chicken lately and it is the bomb.com! Mix together softened butter and herbs (7 tbsp butter, 1 tbsp chopped parsley, 1 tbsp chopped rosemary, 1 tbsp chopped thyme – all fresh) and stuff it UNDER the skin of the whole chicken. Try not to break the skin. Rub some of the mixture on top of the chicken skin to brown it. Place chicken in a large pot with a couple quartered onions and put in oven at 400 degrees on middle rack. cook for about an hour and a half until thighs are 180 degrees. Half way through cooking I throw in about 10 whole peeled garlic cloves. Once finished, you can use the droppings in your broth!

Decided try this chicken noodle soup recipe for friends who had twins with a toddler at home (!) and my daughter struggling with a cold/flu. Using the whole chicken on top was a little odd, but most of the ingredients sounded like what I usually use, and the ease of using rotisserie chicken helped a lot. Within an hour of delivering two whole pots of chicken soup to two different families (along with homemade cornbread) I got phone calls from friends and daughter going crazy over this soup – the toddler even got into it. Thank you so much. This has become my go to “get well soon” chicken noodle soup. It’s also my “baby it’s cold outside” go to soup. It is absolutely delicious. Only change I would suggest is cutting back on the noodles slightly – maybe 6 – 8 oz. of the thick noodles – but that’s a matter of taste. Excellent soup!! As I type, this soup is simmering on my stove, getting ready to take it to a cousin just out of the hospital. Thank you again!

THe soup will freeze well, but I would leave out the noodles and add cook them separately and add them in after it is thawed and reheated. This will keep them from getting soggy.
