Chocolate covered strawberry and banana skewers make a refreshingly light dessert for spring and summer!
Let’s talk spring for a minute. Who doesn’t love Spring? Especially after the polar vortex took it’s toll this winter and left most of us frozen the majority of the winter. The warming weather, the budding flowers, the warm sun shining down. Things that just make a smile creep across my face. One of the other things I love about spring is that fruit starts to become more readily available and affordable at our neighborhood markets.
One of my favorite ways to use fruit in the spring is to make light and healthy desserts. I like dessert a lot. I would wager to say more than the average person. I love a good chocolate chip cookie, a dense, rich slice of chocolate cake, or a piping hot slice of sweet apple pie. But in the spring all the fresh fruit (and the impending swimsuit season) just makes me crave something light and fresh. Chocolate covered strawberry and banana skewers are pretty much spring dessert perfection.
The strawberries are sweet and crunchy, the bananas are smooth and creamy and the chocolate drizzle gives it just enough richness to make it satisfying as a dessert but still allows it to be guilt free! As an added bonus, these can be assembled in minutes and end up looking super fancy! You can eat them yourself or bring them to a room full of ohhs and ahhs at a barbeque or get together.
To assemble them you only need 4 things. Strawberries, bananas, semi sweet chocolate chips and skewers.
Start by washing and removing the cores from the strawberries. The peel the bananas and slice them into 1 1/2 inch pieces. Place the strawberries and bananas on each skewer alternating fruits.
Then heat up the chocolate chips until they are melted by microwaving them in 30 second increments, stirring in between each cycle. Once the chocolate is smooth, while it is still hot, use a spoon to drizzle the chocolate over the skewers. I do this by lining them up on a sheet of parchment as you can see in the picture.
Let the chocolate set for about 20-30 minutes (if you can wait that long) and you are ready to eat this very pretty and ridiculously delicious guilt free dessert!

Chocolate Covered Strawberry Skewers
Ingredients
- 4 Bananas
- 24 Strawberries
- 1/4 Cup semi-sweet chocolate chips
- 6 skewers
Instructions
- Wash and decore the strawberries.
- Peel and chop the bananas into 1 1/2 inch pieces.
- Place on the skewers by placing a strawberry at the end and then a banana repeating until you have 4 strawberries and 3 bananas on each skewer
- Place the chocolate chips in a microwave safe bowl and heat for 30 second increments stirring inbetween until the chocolate is melted smooth.
- Drizzle the melted chocolate over the fruit skewers.
