This fajita chicken salad is a genius twist on the classic chicken salad recipe. It is delicious, and also happens to be paleo, and whole30 compliant for a meal you can love to eat whether you are on a diet or not.
If there is one recipe on my blog that my husband would beg you to try. It would probably be this one. You see when we started our Whole30 challenge {read more about why here} I thought my husband would be in heaven. I am not a huge meat person so me telling him I wanted to do a food challenge that mostly centered around eating enormous amounts of meat had to be what he has been waiting for the past ten years of our marriage right?
Well, it turns out that it was a little harder for him than either of us thought it would be. The whole30 diet is pretty restrictive so the first week we both were reeling a little from the lack of variety and complex taste and textures in our food. When I started meal planning for the challenge, I knew chicken salad would be on the list. It is a favorite of mine and something I could very easily modify to fit our needs.

After I came up with this whole30 fajita seasoning, I knew it would be the perfect flavor combo to add to some chicken salad. So I made the chicken salad and put it in the fridge and went to bed. When my husband came in a bit later, he immediately told me how crazy delicious it was. That is not much like him. I love to eat and make some pretty dang delicious things, but he just doesn’t get excited over food. So when he came in raving, it was a big deal.
I think he ate that chicken salad for every meal until the bowl was empty which took about 12 hours ha! That is when I knew it had to be shared with you.

The recipe is simple. I like to mix the mayonnaise (For Whole30 compliant it needs to be homemade (I used this one, it isn’t as scary as it sounds, I promise!) or you can buy a Whole30 Compliant Mayo like this one with the seasoning first just to get it nice and evenly blended. Then mix the mayo into the chicken and veggies and give it a good stir. Last, add in the cilantro and mix it in evenly. Tada D-O-N-E.
I like to pack my chicken salad with veggies to up the volume I make and also up the health factor. More veggies equals lower calories per serving and more vitamins! If you want to add in some celery or other veggies throw them on in.
Serve it up your favorite way. If I wasn’t on Whole3o, I would probably serve it on toast topped with avocado. Since I am I just put it right on top of a freshly cut avocado half and I don’t miss anything. The creamy avocado and the crunch of the veggies in the salad are like a match made in paleo heaven!

Fajita Chicken Salad {Paleo, Whole30 Compliant}
Ingredients
- 3 cups cooked chicken chopped or shredded
- 1/2 cup mayonnaise homemade or this whole30 compliant mayo
- 1 Tbsp fajita seasoning
- 1/2 red bell pepper finely diced
- 1/2 yellow bell pepper finely diced
- 1/4 small yellow onion finely diced
- 1/4 fresh chopped cilantro
Instructions
- Place the chicken, mayo, and seasoning into a medium bowl and mix well.
- Add the bell pepper, onion and cilantro and mix until it is dispersed evenly throughout.
- Serve on top of a freshly cut avocado or however you like.
- Enjoy!
