Folks, may I introduce you to… The Barbecue Chicken Quesadilla!
No matter how much you love to cook, I think I am not alone in that it can be a real struggle to figure out what will go on the dinner table EVERY night. I don’t want to eat the same thing over and over every night and I don’t have the time and energy to pump out gourmet meals every night. So the trick I have learned over the years is to take my favorite flavor combos from one dish and put them into something else to keep it new and fresh, but really to save my dinnertime sanity!
The hubs loves barbecue chicken and so I was planning on making one of his favs last night, barbecue chicken pizza. Well, things didn’t go as planned (should have figured…. it was that kind of day, sigh) and since I ended up with a bad pizza crust I was scrambling to figure out what would go on the table.
Then it hit. An idea. THE idea! We would just take those pizza toppings and stuff them in a quesadilla! Brilliant! I knew he would love it. Fast forward to the end of the story, he did and I did too!
So today I share this quick and easy, husband pleasing, recipe with you.
Barbecue Chicken Quesadilla
Gather up your pizza ingredients and heat a skillet over medium heat.
Place your buttered tortilla in the skillet butter side down.
Spread the barbecue sauce on the tortilla and layer the sharp cheddar cheese, chicken, and green onions on top. Â You might not use all of them, just put them on to taste!
Place the second tortilla on top, buttered side up and cook 3-5 minutes per side, flipping when the tortilla is golden brown and crispy.
That’s it! Â Easy Peasy, huh? Â I hope this will inspire you to have a great weeknight dinner this week!
Barbecue Chicken Quesadilla
1 Teaspoon Butter
2 Tortillas
1 Tablespoon Barbecue Sauce
1/4 Cup Kraft Sharp Cheddar Cheese
1/4 Shredded Chicken Breast (I use rotisserie)
1 Green Onion, finely sliced
- Heat a skillet up over medium heat.
- Butter one side of each tortilla lightly.
- Place one tortilla in the pan butter side down.
- Spread the barbecue sauce on the side of the tortilla facing up and then sprinkle with the cheese and add the chicken and green onions to taste.
- Put the second tortilla on top with the buttered side up.
- Cook on each side for 3-5 minutes or until golden brown and crispy.
- Remove from heat and cut into triangles.
- Serve hot!
