{Copycat} Double Chocolate Chip Muffins

In high school, I would get a double chocolate chip muffin almost everyday. Gone are the days of a fast metabolism though! I do still love a good muffin on occasion. For a while I’d buy the Otis Spunkmeyer Costco muffins and stick them in the freezer until I was ready for one, but then I realized I could probably make them myself. So, I did. I think they’re better though because I make mine into muffin tops or as Panera calls them “Muffie Tops”. This is such an easy recipe!

What you need:

  • 1 box of triple chocolate fudge cake mix
  • 2 Tbsp flour
  • 3 eggs
  • 1/4 cup plain yogurt
  • 2/3 cup milk
  • 2 tsp vanilla
  • 1/3 cup vegetable oil (or applesauce)
  • 1 teaspoon baking soda

Throw everything into your mixing bowl, saving the chocolate chips for last. I used my Mila powder because it makes me feel better knowing that there is some health in my baked goods. Mila is basically an open Chia seed, so your body absorbs it more easily. I use it just like I would wheat germ, chia or flax seed. You can also substitute Mila for an egg. If you were to substitute one egg, you scoop 1 Tbsp Mila and soak in 3 Tbsp warm water. Once it has soaked up the moisture, pour into your mixture. If you don’t want to substitute an egg, just sprinkle 1-2 Tbsp of Mila into your bowl.double chocolate chip muffin www.thepinningmama.com

Scoop mix out into your regular muffin pan or your muffie pan. Bake at 375 degrees for about 20 minutes or until tops spring back. double chocolate chip muffin www.thepinningmama.comMmmmmmm

{Copycat} Double Chocolate Chip Muffins

Ingredients

  • 1 box of triple chocolate fudge cake mix
  • 2 Tbsp flour
  • 1 teaspoon baking soda
  • 3 eggs
  • 1/4 cup plain yogurt
  • 2/3 cup milk
  • 2 tsp vanilla
  • 1/3 cup vegetable oil (or applesauce)
  • 1/2 bag of chocolate chips

Instructions

  1. Add and mix all dry ingredients to a large mixing bowl. Then add the eggs, plain yogurt, milk and vegetable oil. Mix until combined. Fold in chocolate chips. Add to regular sized muffin tins
  2. Bake at 375 degrees for about 20 minutes or until tops spring back.
