This Chicken Soup recipe is the perfect comfort food for cold and flu season and it couldn’t be easier to make with only 5 ingredients and about 10 minutes of prep!
There is little I love in life more than a recipe that is so delicious you wouldn’t ever guess it is super simple to make. Â This Lemon Chicken Soup IS that recipe. Â This January I decided to do what I like to call Soup-a-palooza. Â Basically it is a couple of days of doing nothing but make soups that are frozen into individual portions so that the hubby and I can grab a quick and easy meal anytime we need to and keep it healthy and wholesome with minimal effort. Â Â This was the FIRST soup on my list to make because it is one of my favorites… And did I mention how EASY it is to make?
Creamy Lemon Chicken Soup Recipe
When I say easy I mean it. Â To start it only has 5 ingredients. Â You take the 5 ingredients, combine them and heat. Â That is it. Â Seriously.
But when you dig in your taste buds will dance because this soup is creamy, rich, smooth and oh so comforting. Â With the rich savory flavor of chicken and the hint of lemon it just balances on perfection. Â And since you can make it with pretty much all low fat ingredients and there are minimal carbs, despite the rich taste, it is a surprisingly healthy option! Â And there is nothing, I repeat nothing, better than this when you are under the weather!
So here is what you do. Â Chop up your rotisserie chicken. Â You don’t have to use rotisserie, but I like to since it has amazing flavor, is so tender and I can pick it up in a moment’s notice at any super market I happen to be near. Â Next get out a good sized pot and pour in the canned soups. Â Add the chicken broth and whisk to combine well. Â If you want it to be over the top packed with flavor, try using the this recipe for the easiest homemade chicken broth ever! Â You can use the rotesserie chicken you need for the soup to make it the night before you make your soup! Â Also, marrow broth is super trendy right now for all of the crazy good health benefits it has. Â After the broth, stir in your chopped chicken and then add lemon juice. Â Throw a little salt and pepper in to taste and cook over medium heat until it is bubbly around the edges and heated through. Â Serve it warm and if you are feeling a little Iron Chef, garnish with parsley to make it pretty!
If you serve this to a crowd you will be asked for the recipe so be ready to send this link on to all of your friends– or pretend like you are a master chef that slaved hours over this intricate recipe– your choice! Â Either way you will be the big winner for serving this yummy soup! Â And if you end up loving this recipe as much as I do, you can double the batch and freeze one half in a gallon sized freezer bag to enjoy later with no prep! Â Double win.
